I used to have my doubts about going to culinary school as I’m convinced that I can pick up similar skills by watching Youtube and practicing my skills until I knew Bloomsbury Bakers. Situated in Bendemeer Road, Bloomsbury Bakers specializes in French and American pastries. When I first tasted their Lychee Martini cake, there were fireworks in my mouth! The cake looked really elegant and refined, and it tasted very light, velvety and fruity. It is just the perfect cake for a romantic date with your girlfriend or boyfriend!

The founders of Bloomsbury Bakers met at Le Cordon Bleu London, hit it off well and then started a bakery business together. In fact, Le Cordon Bleu London is situated at Bloomsbury square, which explains the name used by Ann and Huiyi. It is one of the world’s oldest and largest culinary arts institutions across the world, with London as one of its oldest campus. The school produces many fine chefs and it is no wonder that Bloomsbury Bakers has hordes of followers ordering cakes from them every day.

Last Sunday afternoon, we managed to sit down with Huiyi and find out more about Bloomsbury Bakers. In the hour that we were there, boy, the business was so brisk that we couldn’t even talk undisturbed for 5 mins. Nonetheless, we managed to squeeze some information from Huiyi.

Huiyi, it is so difficult to grab you to chat and it looks like cakes are flying off the shelves, literally. Can you tell us what your customers love about your products?
Our fresh cream cakes such as Lychee Martini are very popular because they are light and fluffy, perfect for Singaporeans. Our Pulut Hitam Tart is also a best seller because it is a very unique flavor combination. All our cakes and tarts are handmade from scratch and they are not too sweet – you can really tell when you try them. I guess that’s why our customers keep coming back for more!

Singaporeans in general is a demanding lot, yet they seem to love your cakes! How do you keep up with their taste?
We always try to come up with new flavors. We are constantly researching and trying new things in the kitchen.
Indeed, you can see one of their most popular cakes is the Orh Nee cake, which is a fusion made using the ingredients of the traditional Teochew dessert and the western culinary techniques. We highly recommend that you give it a try!

Balancing between baking great cakes and managing a good business is not easy. But it seems that you have managed to do it very well. What is the most frustrating thing in managing a good bakery?
Talent and manpower management is the most challenging part of the business. Firstly, recruiting a good staff is very difficult. Then, training and retaining them to work for us is even tougher. When they leave, you will have to start from the drawing board to get new people onboard.
With this in mind, so what would be some of the advice that you would give aspiring bakers who wants to start a bakery business?
Every business would have its own fair share of challenges, such as hiring good talent in the baking industry. At the end of the day, you just have to be prepared to be overworked, but it will be worth it if you are really passionate about what you do.
